Salami Kale Caesar Salad
This salad is proof to me that greens can taste delicious and nutritious all at once, even when you’re in a hurry. My “caesar” dressing isn’t traditional, it’s just convenient. It gets shaken up and made in a jar and tastes amazing with hearty greens, the smoky salami, and crunchy breadcrumbs.

Breadcrumb Topping

cup panko bread crumb

Tbsp. olive oil

Tbsp. mayonnaise

Tbsp. dijon mustard

cloves garlic, grated

Tbsp. olive oil

tsp. kosher salt

tsp. ground black pepper

cups kale or baby kale, stems removed

slices of salami

Freshly grated parmesan cheese

Preparation
Step 1

Fry breadcrumbs and olive oil in a large skillet on medium heat for 5-8 minutes or until breadcrumbs are golden brown.

Step 2

Add lemon juice, mayo, mustard, garlic, olive oil, salt, and pepper to a glass jar and shake until combined.

Step 3

Chop the kale and salami into small 1 inch pieces. Mix kale and dressing in a large bowl. Add the chopped salami and toss to combine. Serve with TONS of grated parmesan cheese and the fried breadcrumbs.
